I don't like 6.Qe1 either, it's not natural.
I think white's main problem is that she wants to solve problems before they are actually problems, ending up playing your game not her own, when it's not needed yet. And when it's needed to parry threats, she plays her own moves.
The final attack where it was important to react, she played her own game instead of working on the threat.

Thanks for the analyses and comments. The assertion from Bastiaan that "white tries to solve problems before they occur" is interesting. My daughter should indeed have worried about the threat, but when it occured, she most likely did not see where things were leading to, and for that matter, neither did I fully comprehend where things would go. In the end, it was a nice game, she practiced her notation skills, she did not place any pieces in direct great obvious danger and we had fun yet again!

Your daughter could have played 7...Bxf3 winning the knight, if you capture with the g2 pawn she plays Nxf3 forking King and Queen.
