Yes. You can go to the analysis board: https://www.chess.com/analysis
From there, you can set up a position and click on the icon which says "Finish vs Computer".

Whenever I try this, neither the FEN nor the PGN update so when I try to finish against the computer or load, it just resets to the starting position (or blank if I first clear the board then set up pieces). How do I get the FEN or PGN to update?

Did you hit the Load button after inserting?
I did hit the Load button and it reset. I tried on Chrome and Firefox.
same things happening with me, it just wont load
indeed i have the same situation i cant setup pieces and start analayzing from that point. it was valid 3 days ago
I found out that there was a bug with Custom setup on beta and apparently it made it out to a subset of members on the site as well.
Staff is aware, though I just tested and it's fixed in beta and for me out of beta.
