I think only OTB is chess and anything online is a variant. I think 2D and not sitting across from your opppnent changes the game significantly from OTB to online. Maybe 3D in VR would come closer?

Bullet chess isn't real chess. There's no real element of calculation / skill involved which is predominantly why there isn't a recognized format for bullet chess over the board as well. It's just a format purely designed for online entertainment.

Chess is about thought, analysis, reasoning. There are hundreds of video games that require quick reactions. This should not be one of them.
If you wanna play bullet, fair play to you. Personally I don't see the point.

If I play 100 bullet games against Magnus Carlsen, I am going to lose all 100 of them (unless he has a stroke or something). What kind of skill apart from chess skill do you think would account for that?

well many famous GMs say that blitz or rapid is better
its all about pattern-recognition under time-pressure
