How good is my rating? It’s 1800 bullet and 1700 blitz. I’ve been playing for 2.5 years

Depends a lot on time control, rating range, as well as an individual player. When I played 60I0 games, and I was around 1 600 - 1 700 range, there were a lot of people around 1 700 rapid rating with 1 500+ FIDE rating.

That same rapid rating of around 1 600 is not the same as rapid rating if one plays 30I0 or shorter. When I started playing slightly shorter games, rating went up around 150 points. Then I started playing 60I0 again and the rating went down. Then I permanently started playing slightly shorter games and again the rating jumped.

On the other hand, there are people over 2 000 with a rather low FIDE rating.

Another important thing is that some people have underrated OTB rating, especially younger players, because they perhaps played OTB chess a year ago, and in a year they could have improved a lot.

So it varies. The only sure way to know one's OTB rating is to play OTB chess. Everything else is a very rough estimation.
