The Rook in most sets.  But like others when I find the right Knight I'm in love.  I like to call the Knights in cheaper, particularly cheap wood sets, CSO--chess shapped object.

And nothing beats the classic pawn (black or white)

As for best looking, I still have to go with the Lewis chessmen. Maybe it's the history of the pieces combined with the detail but I would love to own a replica set.

A well-detailed stained wood white Rook is probably my favorite. With all the stain settling into the crevices and giving a nice shadowy effect... *chessgasm*...

The knight, either color. If i had to pick, i say white. But all the pieces are nice looking, especially if they are good quality and come with a nice board.
