Bots tend to blunder a lot and not take clear chances.
Why can I win against 700-1000 rated bots but not against any real player rated over 300?
Honestly, I'd rather just play the bots than live players. You can relax and try things out, enjoy the structure of a game, re-try an opening in different variations, all without worrying about some A-hole on the other end pre-loading all their moves. Frankly - I hate people.
The real reason is because bots are inaccurate, extremely extremely extremely inaccurate. I can beat a 1300 chess bot when I am literal 627.

I decided to edit my comment because I felt like the one I posted a week before this one was lame.
If you're playing low-level bots and you keep saying, "that was an outright stupid move!" Then it's time to take on a harder challenge.
One thing to say: I think chess bots aren't capable of making balanced moves according to their rating all the time. Like, sometimes they will play the best move, then make a mistake every here and there to match up the rating. However, the mistakes are easy to capitalize upon, which makes the chess bots (mostly up to the 1600-ish ones) aren't that hard to beat, as they're bound to make one mistake to "sum up" their rating. The way how those computers work is that they choose a move that seems the best for their rating, but sometimes there will only be one crucial move, which the computer might miss on purpose, which becomes almost a guaranteed win for the player's side unless they're a patzer (lol).
This is my take on this issue, I just thought about this issue and I felt like this was it, feel free to roast me or whatever on whether I'm wrong or not, you're just wasting your time However any logical or formal arguments are welcome, I love listening to new ideas and sometimes even debating
I am just starting out (rated in the mid 200's!!! ), and yet I tend to beat most of the bots regularly, including just whipping the 3200 max engine. They do indeed make some estrange blunders sometimes. Having said that, there are days the higher rated bots destroy me, like there's a glitch somewhere, and then it gets fixed. I guess AI has some ways to go. I was under the impression that magnus could not beat a 3200 bot??
all of the beginner and intermediate bots purposefully ignore the most obvious threats. even with an 850 bot I simply walked up the board with a pawn and captured like half their pieces because it just ignored it and ended up checkmating the king with the pawn within like 10-15 moves. a real 850 human is much much better than that. the bot ratings mean nothing
There's me struggling against the 1900 bots and a 200 rated player can beat all the bots..... What gives??
@blackrookcafe, yeah exactly my thoughts, I'm sure there's a glitch somewhere. I beat 3200 this morning, and just went back now, and it destroyed me. first time it blundered a queen, which is nuts...
@blackrookcafe, I'm gonna play a 1900 now to see if I can work my magic. If I destroy, I'll send you the PGN
also, for the record, I sometimes play martin and he thinks he's a grandmaster, and destroys me, so the algorithm definitely has some glitches
i bought the book but it was in old nomenclather. couldn't read it easily!!
