What is the best beginner opening for black and why
In my opinion the following openings are good in the beginning:
for white: Italian opening for white. Play dynamic chess, but try to play as principled as possible. Giving up the center for a pawn voluntarly just does not sound right to me in the beginning - so no fried liver!
If black plays scandinavian then go for the main lines. If black plays the modern, french, caro kann then go and get more space in the center with your pawns
for black: symmetrical against central pawn openings (1.e4 e5; 1.d4 d5) against any other opening try to size the center early.
Make sure not to lose too much time on openings and work on stuff that matters! Calculation and tactics is the key in the beginning.
How can I avoid blunders
You cannot "avoid" blunders. They will happen again and again. The only thing you can change is the frequency of your blunders. Stronger players are better, because they blunder less. They know much more, their skills are much better, thus they are not prone to blundering as much.

To be honest, I am really bad in speed chess. My official rapid and blitz ratings are over 100 below my standard fide rating.
Blitz is for stress release, at least for me. After finishing or starting my daily coaching tasks I take time to play some games to relax.

Playing a tons of games every day does not only mean that you get a lot of expierence, but also that you have less time for training.
