@Chimpch Gukesh might get Ding Liren's title because Ding Liren was not as good as he was before. He used to be the 2nd strongest grandmaster in the rankings, but now he dropped to 15th place. On the other hand, Gukesh is in 6th place on the rankings and has a higher elo than Ding Liren. Therefore, Gukesh might defeat Ding Liren.
Emanuel Lasker vs. Eugene Torre was a really interesting match. I would also like to play against Lasker.

After World War II, FIDE recognized 13 players as "Grand Masters" of chess. Now there are over 1,000 times more of these critters and TONS more IMs, FMs etc... You could play one master per day for the rest of your life and you'd never play them all.
I'd want to play against Morphy - just to experience his chess-wizardry firsthand.
He'd destroy me, of course. That would be part of the fun.
@MaetsNori Good pick. He is one of the first chess masters, and playing against his art of romantic attacking would be quite fun. Even though you might get destroyed.
According to Chess.com, there are about 21 players who achieved the title of world chess champion. About 17 have achieved it through classical chess. Who would you want to challenge the most out of the 21 champions?
