it doesnt matter if your opponent doesnt know them, nor do openings matter much at the beginner level. Just dont play the grob as @RivertonKnight said.
Although it isn't considered sound I have huge success with the French Wing Gambit in bullet and blitz. 1.e4 e6 2.Nf3 d5 3.e5 c5 4.b4
There is a critical line that involves a couple of not so obvious moves for Black which completely makes the position uncomfortable for White it is almost impossible to come up with these moves when facing this gambit for the first time.
Yes I win with 1. d4 d5 2. c4 (Queen's Gambit), London System and Van't Krujs' as White, Scandinavian and Caro-Kann with Black against e4, (against c4, d4, Nf3 or anything else, just develop and castle and you'll be fine)
I think the QGA is really brutal on white in most lines. Mainly because I think you need to go in depth to respond to it correctly, and people usually don't do that. It's misleading because people assume it's somehow unsound, and they just treat it superficially and focus on other priorities... it's really completely sound, and it can get quite complex. So they might know the first few moves, but that's really not enough.
