Kings Gambit Yes or No

I like King's gambit accepted but used to do poorly against the Falkbeer which was very trendy at the time so I stopped playing it. Also often struggled against the Kieseritzky (? g5, g4).
Against opponents that are not well clued up on either of these, I used to love it. Boris Spassky was an influence because he played it at the very top level. I may give it a try again.

I played the King's Gambit for a while and had some very fun games with it, but ultimately it felt like I was coming out of the opening worse off more often than not.

Yes, very much. It's my favorite opening to play as White. Super fun! And 1_Qxe8, you are correct, King's Gambit is kind of rarely played, so your opponent as Black will generally be much less familiar with the positions than you. This is a big advantage. With a little study, this opening is very good for White. Certainly for us amateurs, anyway.
In my experience, Black declines the gambit about 50% of the time. This feels like an admission that taking the pawn would be good for White.
